- 170 g of red beans;

- 80 g celery;
- 110 g of carrots;

- 120 g of sweet pepper;

A method of preparing vegetable stew with chicken meatballs
Grind the chicken. It is easy to turn chicken into minced meat with a sharp knife on a board or grind it in a blender.
Add the onion, grated on fine grater, cold cream, pepper and salt to taste to the minced meat.
Thoroughly mix the meat for meatballs, with wet hands we sculpt small balls, put on a cutting board, oiled. We remove the board with meatballs in the refrigerator for 30 minutes.
In a large saucepan, heat the olive oil, throw the onion chopped in half rings, pour a pinch of salt. We pass the onion to a translucent state, when it becomes soft, you can add the remaining vegetables in turn.
Cut the celery stalks into small cubes, throw to the onion.
Just like celery, we chop the carrots and send it to the pan. Fry celery, onions and carrots together for 10 minutes.
Ripe red tomatoes are cut in half, remove the stem. We chop the tomatoes coarsely, put in a pan.
Following the tomatoes, add the sliced pod of sweet bell pepper. Quickly fry the vegetables all together over medium heat.
Now put in a pan pre-boiled red beans.
To make the beans cook quickly, we soak it for 3-4 hours in cold water before cooking. It is advisable to change the water a couple of times. Then we put the beans in a pan, pour two liters of cold water and cook over low heat for 1 hour after boiling, you do not need to salt. Do not pour the broth, it will come in handy in the future.
All together, salt to taste, add a couple cups of bean broth, close tightly with a lid, cook over low heat for 20 minutes.
7 minutes before cooking, put chicken meatballs on the vegetable stew, close the pan again with a lid.
To the table, vegetable stew with chicken meatballs serve hot, sprinkle with fresh herbs, you can season the vegetables with sour cream or yogurt.
By the way, it is good to cook vegetable stew in portioned clay pots. In the pot we put first the sautéed vegetables, then the tomatoes, peppers, boiled beans and meatballs. Cook in a preheated oven for 40 minutes.
